We did not only buy the natural Shyira but the washed as well. We like both lots so much and are thrilled to share this washed lot too. Built in 2017, the Shyira washing station is located at 2000 MASL in the Nyamasheke district. Shyira station collect their cherries from the neighbouring producers that sit between 2000 and 2400 MASL, making this one of the highest grown coffees in Rwanda. At The base of the station, there is fresh water river that feeds into the property, making access very convenient. The cherries are hand-soarted twice: before pulping, removing damaged and underripe cherries and before drying, removing defective beans. The beans then dry for 30 days and are turned regularly. Hand-soarting requires care, knowledge and time and if done right this can make a coffee really stand out. Each local washing station have their own song which they sing during their ritual. The workers sing and dance with great pride, creating a sense of ownership over the process and the quality that they deliver.
